Also named "knife with two nails", the Capucin (Capuchin) is the oldest knife known, as the Romans already used it two thousand years ago. No spring for this piece of antiques but one nail or axle to make the blade wing round and another one to stop it in the open position.

 

A company dating back to 1835 and family business since 1902, the Cognet company has been boasting a worldwide reputation for its famous DOUK DOUK. Pierre Cognet, cutlery to thiers, is the company's current CEO and a founding member of the Couté de Tié Guild.
