The medieval village of Sauveterre de Rouergue founded in 1281 and classed as one of France's "Most beautiful Village", is a lovely 13th century royal bastide built around a square with its multitude of arcades.

The "Atelier de Sauveterre" has taken over the manufacturing of knives, as was the village's main activity from the 13th to the 18th century.
